Although many Lambic breweries weren’t doing well at the time, Boon pressed on and even started to build his own brewhouse at a new site in the centre of Lembeek. In the autumn of 1990, Boon brewed the first beer at his new brewhouse. The new brewhouse was built with second-hand equipment from older breweries, but it was still a key moment for the saviour of Geuze. Due to Boon’s perseverance, the brewery managed to kick off and earn its well-deserved reputation for producing high-quality and authentic Lambics.

What started as the legacy of the saviour of Geuze eventually became a family business today. In 2012, Boon’s eldest son Jos joined him at the brewery. Jos had graduated as a bio-engineer specialising in brewing and malting from KU Leuven university.

5 years later, Boon’s second son Karel also started working full time at the brewery. Karel had studied Applied Economics Science at the same university and already had experience working at another brewery. Like Jos, Karel had grown up with the brewery, and eventually developed a passion and love for beer and brewing!

Today, Boon Brewery is one of the most well-respected Lambic breweries in Belgium. Boon's commitment to quality and tradition has earned the brewery numerous awards and accolades, and its beers are enjoyed by beer enthusiasts around the world.
